Chestnut ravioli in soup Scallops with Leeks

Ingredients: Serves 4

4 yellow potatoes 2 leeks

2 tablespoons extra virgin olive
800 ml of vegetable broth

white pepper fresh parsley


Preparation: In a saucepan

Heat a little olive oil.
Wash the leeks, cut into thin slices, pour in the pan and fry over low heat. Meanwhile, peel
potatoes, cut into very thin slices and then add them in the pot. Cover with vegetable stock and simmer on very low flame for about an hour.
When the potatoes are well cooked turn off the heat and whisk well using an immersion blender.
Cook for another 5 minutes, add the washed and chopped fresh parsley and a pinch of pepper
